PHILOSOPHY

Slow food.

The day that a MacDonald's opened a branch near the Spanish steps in Rome the Italians started the slow food movement. The core of the movement is based on 3 principles:

Good Food: Promoting food that is rich in taste and nutrition, sourced from local producers who prioritise quality over quantity.

Clean Food: Advocating for production methods that protect the environment, including sustainable agriculture and responsible farming practices. 

Fair Food: Ensuring that food producers receive dignified incomes and that food is accessible to all. 

This philosophy resonates with us, in fact its so perfect in its simplicity, that we now live and cook by its principles.
